INGREDIENTS:
• 1 lb. sweet potatoes, cubed into 1" pieces
• 3 tbsp. extra-virgin olive oil
• ½ tsp Kosher Salt
• ¼ tsp. Freshly ground black pepper
• 1 tbsp. Italian Herbs
• 1 tsp. Mustard Powder
Steps to Make it:
1. Preheat oven to 450º,
2. In a large bowl, toss sweet potatoes with oil and all the seasonings.
3. Spread on a large baking sheet. Don’t overcrowd the pan as the sweet potatoes need some breathing room on the pan.
4. Roast until tender, 25 to 30 minutes. Toss halfway through.
