Grilled Shrimp and Pesto Pasta
The basil, pine nuts, olive oil and garlic pack pesto sauce with disease-preventing antioxidants such as vitamins A and C, and heart friendly mono and polyunsaturated fats.

Pasta Ingredients:
• 12 oz pasta of choice (ziti, penne and spaghetti)
• 2 tsp salt
• ¾ cup pasta water

Pesto Ingredients:
• 1/4 cup pine nuts
• 2 cups (60g/2oz) fresh basil leaves
• 1/2 tsp salt
• 1/4 tsp black pepper
• 1 garlic clove
• 6 tbsp extra virgin olive oil 

Grilled Shrimp Ingredients:
• 1 pound shrimp, peeled
• ½ teaspoon chili powder
• 3 tablespoons lime juice, freshly squeezed
• 1 teaspoon lime zest
• 3 garlic cloves, minced
• ¼ teaspoon salt
• ¼ teaspoon pepper
• 2 tablespoons olive oil

Steps to Make the Pesto Sauce:
1. Preheat small skillet over medium high heat (no oil). Add pine nuts and toast until light brown. Immediately remove and let cool slightly.
2. Place all ingredients except olive oil in a food processor or blender. 
3. Blitz until finely chopped.
4. With the motor running, slowly pour the oil in. Blitz until smooth (or to desired consistency), adding a touch of extra oil if required to help it blitz.
5. Handheld blender: Place all ingredients (including oil) in a bowl. Blitz with hand held blender until smooth.

Steps to Make the Pasta:
1. Bring a large pot of water to the boil with the salt.
2. Add pasta and cook for the length of time per the packet.
3. Just before draining, scoop out 1 cup of the pasta cooking water.
4. Drain pasta in a colander, leave it for a minute.
5. Transfer pasta to a bowl
6. Add pesto and 1/4 cup of pasta water. Toss to coat pasta in pesto, adding more water if required to make pasta silky and saucy, rather than dry and sticky.
7. Taste, add more salt and pepper if desired.

Steps to Make the Grilled Shrimp:
1. Combine all ingredients in a large bowl and thoroughly cover shrimp.
2. Cover bowl and marinate for 15 minutes.
3. Turn grill to high and skewer the shrimp. Ensure grill is fully heated to high temperature before grilling the shrimp.
4. Grill the shrimp 2-3 minutes a side. When the shrimp turn an opaque pinkish color on both sides, they are cooked.
5. Serve on top of Pesto Pasta.
